My home version of Shrimp Avocado Fajitas!

It’s Cinco de Mayo! If you didn’t know, today commemorates the Mexican’s army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War (1861-1867).  So it’s only appropriate to have Fajitas tonight to celebrate, right?!  Please enjoy!

Shrimp Avocado Fajitas

  • 8 Shrimp
  • 1 Tbs Mexican Seasoning
  • 8 Asparagus
  • Lime or Lemon
  • 1/2 cup Arugula
  • 1/2 cup Salad Mix (red cabbage, cabbage, ad romaine) shredded
  • Sliced Red Onion
  • Grape Tomatoes
  • Half Avocado
  • Crumbled Feta Cheese
  • 2 Corn Tortillas
  • 1 Tbs Olive Oil
  • Kosher Salt
  • Pepper

Season shrimp with Mexican seasoning, salt, and pepper, set aside.  Season asparagus with 1/2 Tbs olive oil, salt, and pepper, set aside.  Slice grape tomatoes, add to arugula and salad mix, squeeze lemon, and season with salt and pepper. Once mixed, sprinkle crumbled feta.  Heat grill pan med-high.  Add 1/2 Tbs olive oil to pan, grill shrimp on both sides till pink. Add asparagus to pan, grill to desired tenderness.  Heat tortillas on grill pan, once heated, plate your food with slices of avocado.  Add lime or lemon to grill pan and use to squeeze over your fajitas.
